In the World of Coffee
Espresso was born in Milan around the turn of the last century, when Italian inventors raced to build machines that could brew coffee fast enough for a standing bar: espresso means "pressed out," and a proper shot forces near-boiling water through fine grounds at nine atmospheres in under thirty seconds. What emerges is coffee's essence: dark, syrupy, crowned with hazel crema, meant to be drunk in two sips at the counter while the day rushes past.
