The Cosmopolitan

The Cosmo as we know it was perfected in 1980s Manhattan, where Toby Cecchini balanced citrus vodka against fresh lime and just enough cranberry to blush. A certain television show made it the most famous drink of the nineties, but underneath the fame is a genuinely great sour. You'll need: 1.5 oz citrus vodka 1 oz Cointreau 0.75 oz fresh lime juice 1 oz cranberry juice Shake hard with ice, strain into a chilled coupe, and finish with a flamed orange twist. It should be pale pink, not red.

The French 75

Named for the French 75mm field gun of the First World War, this drink came out of Harry's New York Bar in Paris around 1915: a gin sour given artillery by Champagne. It remains the most elegant way to start an evening. You'll need: 1 oz gin 0.5 oz fresh lemon juice 0.5 oz simple syrup 3 oz chilled Champagne Shake the gin, lemon, and syrup with ice, strain into a flute, top with Champagne, and garnish with a long lemon twist.

The Paloma

Mexico's favorite tequila drink is not the margarita: it is the Paloma, "the dove," born in the cantinas of Jalisco where grapefruit soda met the local spirit. It is taller, lighter, and more refreshing than its famous cousin, and it asks almost nothing of you. You'll need: 2 oz blanco tequila 0.5 oz fresh lime juice Grapefruit soda, to top Pinch of salt Build over ice in a salt-rimmed highball: tequila, lime, salt, then soda. A splash of fresh grapefruit juice makes it even better.

Sangria

Sangria descends from centuries of Spanish and Portuguese wine punches, named for its blood-red color, and made properly it is far more than fruit floating in wine. The secret is time: the fruit must sit in the wine and brandy long enough to trade flavors. You'll need: 1 bottle Spanish red (Garnacha works beautifully) 2 oz brandy 1 orange and 1 apple, sliced 1 tbsp sugar Splash of soda water Stir everything but the soda, chill at least four hours, and serve over ice with the soda splashed in at the end.

The Gin Fizz

The fizz family dates to the 1800s, and the Gin Fizz is its clearest expression: gin, lemon, sugar and soda, shaken cold and lengthened at the last moment. Jerry Thomas printed a version in his 1876 bartender's guide. New Orleans later gilded it into the Ramos, but the original needs nothing added. You'll need: 2 oz gin 1 oz fresh lemon juice 0.75 oz simple syrup Soda water Shake the gin, lemon and syrup hard with ice, strain into a tall glass over fresh ice, and top with soda.
