The Paloma
Mexico's favorite tequila drink is not the margarita: it is the Paloma, "the dove," born in the cantinas of Jalisco where grapefruit soda met the local spirit. It is taller, lighter, and more refreshing than its famous cousin, and it asks almost nothing of you.
You'll need:
2 oz blanco tequila
0.5 oz fresh lime juice
Grapefruit soda, to top
Pinch of salt
Build over ice in a salt-rimmed highball: tequila, lime, salt, then soda. A splash of fresh grapefruit juice makes it even better.
