Cabernet Sauvignon is the world's most planted noble grape, born in seventeenth-century Bordeaux as a chance cross of Cabernet Franc and Sauvignon Blanc. Thick-skinned and slow to ripen, it makes wines built to last: dark currant fruit, firm tannin, and the cedar and graphite that emerge with a decade in the cellar. From the gravel banks of the Medoc to the hills of Napa, it is the grape of structure and patience.
