Mimosa
A Proper Mimosa
The mimosa was born around 1925 at the Ritz in Paris, named for the yellow bloom of the mimosa tree, and it has owned late mornings ever since. The rule the Ritz knew and brunch menus forget: it is a wine drink, not a juice drink.
You'll need:
Chilled dry sparkling wine
Fresh-squeezed orange juice
Fill a flute halfway with sparkling wine, top gently with juice, and do not stir. Equal parts at most, and never orange juice from a carton if the oranges are any good.
