Prosecco pours from the glera grape on the steep green hills between Valdobbiadene and Conegliano, north of Venice, where the best slopes are so sheer they are harvested entirely by hand. Made sparkling in steel tanks rather than bottles, it keeps everything fresh: white peach, pear blossom, and a soft, easy fizz. It is the aperitivo hour in a glass, the sound of a piazza at six in the evening.
