Bringing an evergreen indoors for the winter feast is older than Christmas itself, but the decorated tree we know took shape in sixteenth-century Germany, where families hung apples, nuts, and paper roses from a fir. Prince Albert set one up at Windsor Castle in the 1840s, an engraving of the royal family around it went around the world, and within a generation the tree stood in parlors from London to Charleston. What was poured beneath it was usually red and usually warm: Germany's Glühwein, Sweden's glögg, England's mulled claret.
Mulled wine for a crowd, serves 8
- 2 bottles of fruity red wine (Zinfandel or Merlot)
- 1/2 cup brandy
- 1/3 cup honey
- 2 oranges, sliced
- 4 cinnamon sticks, 8 whole cloves, 3 star anise
- A sprig of spruce or rosemary for the pot
Combine everything in a pot and warm gently over low heat for 30 minutes. Never let it boil, or the alcohol and the fruit go with it. Ladle into mugs with an orange slice and keep the pot on the lowest flame all evening.
